TABOULÉ WITH OLIVE OIL & MINT
Tabbouleh is a dish made of small steamed pearls of semolina which makes a wonderful accompaniment. It's a good alternative to rice and a perfect base for salads.
Ingredients

2 cases. vegetable Grand Cru olive oil
4 tbsp. olive & mint oil
Salt and pepper
At the market
1 medium onion, finely chopped
1 clove of garlic, minced
3/4 cup water
1 1/4 cup low-sodium chicken broth
1 1/2 cup semolina
1/2 cup fresh parsley, finely chopped
1/2 cup fresh basil, finely chopped
1/3 cup fresh mint, finely chopped
1 tbsp. lemon juice
3 tomatoes, diced
Steps
Saute onions in olive oil in a saucepan over medium heat, stirring occasionally, until golden brown, about 3 minutes. Add the garlic and cook, stirring, for about 30 seconds.
Add the water and stock and bring to the boil. Add the semolina, then cover and remove from the heat.
Let the semolina sit, covered, for about 5 minutes, then mix with a fork and add the herbs, tomatoes, lemon juice, olive & mint oil and season with salt and pepper.
