These Vintage Olive Oils are selected around the Mediterranean by our expert Oléicologue Alexandra Gauquelin-Roché, who tests over 300 olive oils each year to select just 30 Grands Crus that meet Oliviers and Co's quality criteria.
- Aromatic olive oils :
Intense and natural, our flavored olive oils are made with pressed olives and herbs (basil, thyme, mint, garlic...) or citrus fruits (lemon, tangerine...). Nothing is added.

In the kitchen, olive oil is a great classic and a healthy base for all your dishes! Our famous "La classique" is the perfect accompaniment to your cooking and a delicious finishing touch to your dishes. How do I use truffle oil?
Do you love olive oil and the flavours of truffles? Pour a few drops of our speciality over pasta with truffle oil or risotto with truffle oil and enjoy its subtle or intense aromas. Read all our advice on using truffle oil.
Which truffle olive oil should I choose?
The oil commonly known as truffle oil is generally olive oil (and sometimes sunflower oil) to which truffle flavouring and sometimes truffle pieces/lamellae have been added. Not all truffle oils are the same, so read the label and check the opaque container, the extra virgin olive oil base, the flavourings... the presence of slivers is no guarantee of better quality or more pronounced flavours. At Oliviers&Co, our oils are made from extra virgin olive oil, which is then flavoured.
Black or white truffle oil?
The use and choice of truffle oil depends on your culinary tastes. Black truffle oil has an intense flavour, with notes of undergrowth and even garlic, and goes well with meats such as veal and stews, as well as vinaigrettes, eggs and beef. White truffle oil is rarer, precious and subtle in flavour, and goes very well with white meats as well as fish, rabbit, carpaccios, risottos and seafood.

All olive varieties available at Oliviers & Co: buy your olives now! Discover our olives: Lucca olives, Kala Somata olives, Picholine olives, Tanche olives, Taggiasca olives and Noceralla olives... Kalamata olives This purple olive has a smooth, fleshy texture. Its name comes from the Greek town of Kalamata . Noceralla olives These hand-picked olives are found mainly in the Sicilian region of Belice. This green olive is the result of a long tradition dating back to the Greek colonies in Sicily. It is also found in other countries such as India. A fine variety of black olive: the Tanche olive These olives come from the town in the Nyonçaise region (south of "La Drôme"). This is a mixed olive variety, also known as the Nyons olive. It produces a particularly sweet oil. Taggiaca olives This is an Italian specialty from Liguria. This region borders France. This small olive is said to be of the highest quality.

What is a tapenade?
Tapenade is a Marseilles recipe dating back to 1880, created by chef Meynier to garnish mimosa eggs at the restaurant La Maison Dorée. It was black tapenade! Tapenade is made with capers, garlic, herbes de Provence and anchovies. To qualify as a tapenade, the list of ingredients and their proportions must be strictly regulated. Green or black olive tapenade? The term tapenade (alone) refers to black tapenade! But it can also be made with green olives. The difference in taste will of course depend on the type of olives used: a tapenade made with black olives will be more tangy, while a tapenade made with green olives will be more bitter. What is an olivade? An olivade is a green or black olive paste, whose only obligatory ingredient is the olive (green or black, minimum 50%), to which optional ingredients can be added in any proportion. Create spreads and dippings with our herb mixes For a successful aperitif, place your tapenades, olivades and a few cookies on a platter and complete with dippings: typical preparations from the Mediterranean basin that are easy to make with our herb mixes: Bruschetta, Tzatziki, Kirmizi or Zaatar... to be eaten with bread, cookies... Tips and tricks
Preserving all the qualities of fresh fish over several years thanks to canning, our sardines in olive oil improve with age, like a fine wine. So, to ensure that the olive oil preserves the sardines well on both sides, remember to turn your tins over regularly!
