Mashed potatoes with olive oil

Try this delicious, creamy mashed potato. Ideal for serving to a large group or at a party.


At Oliviers&Co
1/3 cup Spanish olive oil
1 tbsp. white condiment

At the market
900g potatoes, cut into 5cm pieces
10cl cream


Place the potatoes in a pan of cold water. Add salt and bring to the boil. Reduce the heat and cook until the potatoes are tender, about 12 to 15 minutes.

Remove from heat and drain potatoes, reserving 1 cup of cooking water.

Place the potatoes in a bowl and start mashing with a potato masher. When the potatoes are mashed but still chunky, add the olive oil, white seasoning and cream. Continue to mash until smooth and creamy.

Before serving, drizzle olive oil over the top.
