LEMON LINGUINE, SHRIMP and ARUGULA
This pasta dish is so fresh and light thanks to the combination of shrimp, lemon and arugula. The quality of the pasta makes all the difference and gives a delicious consistency. This dish can be prepared in less than 15 minutes.

2 cases. olive oil La Classique
1/2 cup olive & lemon oil
At the market
450g shrimp, peeled and deveined
450g pasta
2 shallots, diced
2 cloves of garlic, minced
1/4 cup lemon juice
3 cups of arugula
1/4 cup parsley, chopped
Steps
Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Save 1 cup of the pasta cooking water.
Meanwhile, heat the olive oil in a heavy skillet. Add the shallots and garlic and cook for 2 minutes.
Add the shrimp and cook until they turn pink, about 5 to 7 minutes.
Add the cooked linguine, lemon juice, salt and pepper and mix.
Turn off the heat and add the arugula and the olive & lemon oil. If you need more juice, add a little pasta cooking water.
Add the chopped parsley and mix again. Serve immediately.
