Raw & cooked tomato salad
A super-simple, fresh and delicious tomato salad featuring tomatoes in two forms, seasoned with oil and vinegar.
Ingredients

Summer olive oil
2 tbsp pomegranate vinegar sweetness
Bruschetta mix
Camargue salt
Pepper
At the market
20 cherry tomatoes
3 heirloom tomatoes
Redcurrants
2 pinches cane sugar
Steps
Heat 1 tbsp olive oil in a frying pan and fry the cherry tomatoes with the sugar over high heat for 5 minutes, turning several times to soften. Sprinkle with bruschetta mix.
Slice the tomatoes and place in a dish, adding the cooked tomatoes and a few currants.
Season with salt and pepper.
In a bowl, mix 4 tbsp. summer olive oil with the vinegar. Pour over the tomatoes and sprinkle with salt and pepper.
Serve immediately and enjoy!
