Sweet crepes with flavored olive oil

A crêpe is a very thin pancake. They are served with a wide variety of toppings, from the simplest with just sugar to flambéed crêpes Suzette or savoury galettes.


At Oliviers&Co
2 tbsp aromatic olive oil (lemon, tangerine, lime or orange)

At the market
1 3/4 cups flour
4 eggs
1 tbsp. vanilla extract (optional)
1 tbsp. sugar
2 cups milk


In a large bowl, add the flour, eggs, vanilla extract, aromatic olive oil and sugar. Beat with a whisk or electric mixer.

Gradually add the milk until you have a smooth, lump-free batter.

Heat a lightly buttered crêpe pan over medium-high heat.

Pour the batter onto the crêpe pan, then tilt and turn the pan to spread the batter as thinly as possible.

Brown the crêpes on both sides for about 1-2 minutes and serve hot with your favorite spread.
