LINGUINE ALL'ARRABBIATA & LEMON SARDINES

A slightly spicy pasta recipe, but so comforting! The touch of lemon brings a slight acidity to this delicious dish.

Ingredients

Olive oil & basil

Salsa All'Arrabbiata Organic

Salt & herb mix for pasta and salad

500g corn linguine

At the market

1 onion

1 clove of garlic

1 can of small sardines in olive oil and lemon

1 tbsp. capers in vinegar

1/2 organic lemon

Steps

Bring a large pot of salted water to a boil.

Meanwhile, brown the chopped onion, crushed garlic, and capers in a large pan. Pour in the Arrabbiata sauce and cook for 15 minutes over low heat.

Grate the zest of half a lemon and add it to the pan. Adjust the seasoning if necessary.

Cook the linguine to al dente. Take a small ladle of cooking water, drain the pasta then pour it over the sauce. Add the cooking water. Bring to a boil, stirring to coat the pasta with the sauce.

Put the pasta in a large deep dish. Place the whole sardines on top, drizzle with a drizzle of olive & basil oil and serve immediately.

For a variation, replace the sardines with peppered pecorino.
