STRAWBERRY and LIME PANACOTTA

A delicious and refreshing recipe with freshly cut strawberries and organic olive oil.

Ingredients

Organic olive & lime oil

At the market

3 cups of cream

1/2 cup sugar

4 leaves of gelatin

1.5 organic lime

3 cups of strawberries

Steps

The previous day

Soften 3 leaves of gelatin in a bowl of cold water.

Heat the cream with the sugar, remove from the heat as soon as it boils and add the gelatin leaves previously squeezed between your hands, then mix. Let sit for 5 minutes.

Add the grated zest of a lime. Pour into four glass containers (about 2/3 full) and refrigerate until the next day.

The next day

Soften the remaining gelatin sheet for 5 minutes in a bowl of cold water.

Wash, hull and blend 1 cup of strawberries with the juice of the remaining half a lime. Separate 2 tbsp. of coulis and add the drained gelatin and stir quickly over low heat to dissolve the gelatin, add to the coulis, mix and spread over the panacotta. Return to the refrigerator for at least 1 hour.

When ready to serve, cut the remaining strawberries into small cubes, like a tartare, and put them in a bowl. Add 2 tbsp. olive & lime oil and mix everything together.

Pour over the panacotta and enjoy!
