An Italian appetizer consisting of grilled or toasted bread/baguette slices and toppings. These crostini are also delicious with sun-dried tomatoes.

6 slices of bread

4 tomatoes

1 cup ricotta

2 spring onions

1/2 bunch of basil

3/4 cup prosciutto ham

1 cup mozzarella, sliced



Preheat the oven to 225°C.

Cut the tomatoes into slices, sprinkle them with oregano, salt, pepper and drizzle with olive oil. Leave to set in the oven for about 1 hour.

Slice the onions and mix them with the ricotta with 10 washed and chopped basil leaves, salt, pepper and oregano.

Lightly toast the bread and rub it with olive oil. Spread a layer of ricotta on the bread, add the tomatoes, prosciutto and mozzarella. Sprinkle with salt, pepper and oregano.

Place the crostini in the oven for 5 minutes.

Add a few basil leaves and a thin drizzle of olive oil before serving.
