GRILLED TOMATO and MOZZARELLA SKEWERS

Ripe tomatoes, fresh mozzarella and basil... Savor the essence of summer with this version of Caprese salad on a skewer!

Ingredients

1/4 cup olive & basil oil

2 cases. balsamic vinegar of Modena silver quality

1 tbsp. black olive tapenade

2 cases. daily olive oil

Pepper

At the market

3 tbsp. shallots, finely chopped

1 tsp lemon zest

Country bread, cut into 3 cm cubes

450g fresh mozzarella balls

1 bunch of cherry tomatoes

100g mixed young shoots

Basil leaves

Steps

Preheat the oven to 180°C.

In a medium bowl, whisk together the olive & basil oil, balsamic vinegar, black olive tapenade, shallots and lemon zest. Reserve.

Lightly grease the oven rack with olive oil and heat. Place the bread cubes in a large bowl and drizzle with olive oil to coat.

Alternately thread the bread cubes, mozzarella, tomatoes and basil leaves onto 6 long skewers. Place them on the grill and turn them often until the mozzarella begins to melt, about 4 minutes.

To serve, divide the baby sprouts among 6 plates, then top them with a grilled skewer and drizzle with the prepared vinaigrette. Pepper to your taste.
