RED FRUITS, LEMON CREAM & OLIVE OIL CRISPS
An original dessert recipe based on red fruits, lemon cream and a crunch with olive oil.

1 jar of lemon cream
Summer olive oil
Sweetness of pomegranate vinegar
At the market
500g strawberries
250g raspberries
150g of sugar
100g of flour
100g almonds
60g of almond powder
1/2 teaspoon baking powder
1 egg
Steps
Flour the work surface.
Pour in all the dough ingredients, except the whole almonds, and mix until you have a smooth dough. Add the almonds, mix, cut the dough and form rolls.
Preheat the oven to 220°C.
Place them on a baking sheet lined with parchment paper and put them in the oven for 15-20 minutes. Take them out, lower the oven to 100°C, let them cool and cut them with a knife into 2cm slices and put them back in the oven for 50 minutes.
Let them cool on a rack.
Divide the lemon cream among 4 glasses, add the red fruits on top. Drizzle with summer olive oil and pomegranate vinegar. Serve with the crispies.
